We’ve been thinking from quite some time about how would develop our “floral gastronomy” concept about roses in food when really skilled professionals get involved in the game. Talanted master-chefs definitely have some ideas to surprise with, and to surprise even fanciful rose food minds like ours. That’s why we left Rosey’s mark new rose jams in the hands of Milen Zlatev, chef of Talents restaurant in Sofia, and just let him freely create his culinary art.
The result: first Roses Night Menu in Talents restaurant which took place on Friday night of September 16-th. Chef Zlatev had prepared for us 4-course menu in which we could read his interpretation about roses on the plate – roses come on the scene gently, unoptrusively and with every dish we expect them more, till we come to dessert where roses triumph for a final! Here in written the original menu created by chef Zlatev:
Amuse: Cheese sphere with rose jelly and crisp cracker
Starter: Poached green asparagus with quail eggs, Romesco sauce and black sesame
Main course: Tender chicken with corn puree, wild mushroom croquettes, smoked leek and chicken jus
Dessert: Carrot halva with white chocolate ice cream and rose coral
Actually, chef Zlatev surprised us with two more things we haven’t read in the menu: fresh prosecco based cocktail with roses as a welcome drink and an elegant fragrant rose sorbet on mango cubes and lychee fruits as pre-dessert.
