Rose and lavender infused honey
Floral sweetness for every breakfast

Infusion preparation consists in extracting the beneficial compounds and aromas of herbs and spices using some kind of liquid. Besides pharmacology, this method can provide great usages also in cooking. We’ve already used the principles of infusion in our floral-flavoured recipes creation, like this rose infused gin cocktail or this lavender milk bedtime recipe. Actually, infusing rose or lavender blossom would work nicely with any kind of neutral in taste alcohol, milk and even water. Well, rose tea is rose infused in hot water, right? Today however we’re about to infuse something less ordinary – honey.
Honey is one of our favourite sweeteners, especially during the cold season. It’s known as great alternative to white sugar, particularly when used in recipes that don’t require high heating of the honey. Row honey is renown also for healing food with series of health benefits, such as antioxidants contents, antibacterial properties, cough relief, digestion support and as a source of energy. When we add the aromatic and beneficial properties of our favourite essential oils containing edible flowers, rose and lavender, we get a crazy, floral, super-version of honey that you simply must try.
INFUSED HONEY WITH ROSE AND LAVENDER
PRODUCTS:
please use the proportion bellow for the quantity of honey you want to infuse
100 g honey
1 tablespoon dried rose blossom by “Rosey’s mark”
1 tablespoon dried lavender blossom by “Rosey’s mark”
- Mix the ingredients, stir well and let infuse for at least one week in order for the aromas and beneficial compounds to fully extract.
- Use on top of pancakes, toasts with cream cheese, combined with different kinds of soft and matured cheese, with yogurt, milk or beverages of different kind.
