History and tradition
Usage of rose water in cooking is part of culinary traditions from Ancient times till that day. For introducing distilled rose water in kitchen we need to thank ancient Persia, from where it later spreads to India and Pakistan, being used in drinks like masala chai and dishes like biryani. We see rose water as ingredient in traditional Turkish and Arab recipes with rice and meat, also in desserts. Back to current day, currently the rose flavor lives its modern renaissance. It is being used as distinctive ingredient in refined culinary creations of top chefs in France, UK, and Bulgaria, as a growing trend in the contemporary culinary world as a whole.
Dedicated to the Bulgarian oil-bearing rose as an edible flower, our Rosey’s mark team studies for quite some time the role of rose water in cooking, where and how it is used. In the process of our studies we’ve been struck with one thing – Bulgaria, the land of roses of today, lacks tradition and methodology for usage of rose water in food. We estimate the reasons for that paradox from one side with the fact that Bulgaria today is specialized in primary processing of the oil-bearing rose in distilleries. They are offering rose oil and rose water as raw materials mainly for cosmetics and perfumery, for pharma industry and in very small amount for the food and beverage industry. From another side, the renaissance of roses in food is a recent phenomenon and research and development of new products, with no existing local know-how to base them on, is a complex and long process. And so, while the bottling of rose water (and often with Bulgarian provenance) for cooking purposes is tradition in France or Morocco, recently even in Japan, this is not the case in Bulgaria. Till today!
On a mission – Bulgarian rose water as a product for culinary purposes
After we have found that in Bulgaria there is no existing practice for bottling distilled rose water in the food and beverage industry, our team dedicated many months to the mission “rose water for cooking purposes”.
First, we have attracted a multi-disciplinary scientific team to build the necessary methodology for bottling that kind of food and beverage product. Through series of tests and laboratory analysis, taking in consideration the characteristics of the Bulgarian rose as essential oi-bearing plant, we have studied the necessaries values for guaranteed safety of the product when consumed. As a result, we have reached clean product on microbiological level and at the same time a stable product with long enough shelf life of 12 months minimum. Than was the first strictly necessary step – we had the technological methodology written.
The second step was transforming theory into practice. After few more months of active searching, we have reached the necessary conditions for actual bottling of the rose water for cooking and drinking, and as an organic certified product.
The third, crucial step consisted in choosing the best and most appropriate raw material. From the rose fields, their location and the way they are taken care of, through the very process of fire-water distillation of the fresh rose blossom, to the correct keeping and storage of the distilled material – each element pays its role in order for us to achieve this 100% natural, pure and well-balanced product we have in our hands today.
