June is time for fresh salads with lots of green inside. And it’s the roses season here in Bulgaria so our salad is with roses, that’s inevitable! We have chosen to mix spinach, arugula and carrots in a vitamins cocktail. We have added also some extras – dried fruits and raw nuts. Then we’ve put together a special salad dressing that we are willing to save by copyrights… Its major plus is that it will give the taste of the roses to your salad even if you don’t have fresh edible rose petals, thus can be used all year round.Ingredients for the salad:
- Sliced almonds
- Dried cranberries
- Edible rose petals (idealy from rosa damascena)
- Olive oil
- Balsamic reduction with fruit taste (we’ve used fig)
- Fresh lemon juice from 1/2 a lemon
- 5-6 fresh basil leaves
- Rose jam – 1 tablespoon
- Salt and pepper to taste
First prepare the dressing in a separate bоwl. Chop the basil leaves and add them to the rose jam and the lemon juice. Stir. Add the olive oil, the balsamic reduction, salt and pepper to taste. Stir well.
Mix the salad – spinach, arugula, carrots sliced in 2 mm. thick strips. Add a handful of dried cranberries and a handful of sliced almonds. Top everything with the dressing and mix carefully. Finish with the rose petals and serve!
